Meet Our Chefs
After finishing third in the Bocuse d´Or France competition, Frédéric Coiffé was inducted as a Maître Cuisinier de France in 2008. He learned his craft by working with chefs such as Richard Coutanceau and Alain Ducasse. He remains constant in his discipline, his inventiveness, and his desire to please, whether he works in the kitchen for the Accord Group, as the Executive Chef of Pullman Bordeaux Lac, or when he manages L’Atelier du Goût, his restaurant in Bordeaux Lac founded in 2016.
From 2017 to 2019, he founded and managed l’Echoppe des Halles in Les Halls de Bordeaux. He was the culinary consultant of the So France bistro in Singapore, as well as that of Latitude Vin, in the wine-loving city of Bordeaux. He also opened the Bar de la Marine, a warm and lively place – Bordelaise style! In addition to his cooking expliots, Frédéric Coiffé shares his passion and his knowledge during business training and as a culinary consultant with FC Consult’in.
If he were to create the perfect fragrance, he would most certainly be inspired by the scents of the roasting chicken for a Sunday lunch, or the blanquette of veal on a Tuesday evening!
Born in Paris into a family that has worked with pastry and bread bakeries for generations, Vincent Coulange trained as a pastry chef, chocolatier, ice cream maker and confectioner, before hitting the road to the South of France, in the large luxury hotels of Cannes, to perfect his mastery of gourmet pastries. He remained there for a few years before moving to Barcelona and founded a small gourmet pastry catering company.
After ten years of Spanish heat, he moved to Charlevoix with his wife and three children. In more than a dozen years, he has delighted the guests at Le 51 restaurant and then at the Culinarium regional product workshop-laboratory, both in the heart of Baie-Saint-Paul. He then took over the management of the pastry practice at Hotel Le Germain Charlevoix, and finally, he worked at the heart of the Groupe Restos Plaisirs in Quebec.
